Here is a new fish item to put on the menu for Singaporeans who are changing their eating habit to cope with the current downturn and going for more home cooked meals.
Even though Singaporeans maybe opting for more home cooked meals, the tendency is to go for food that they are familiar with. I am talking about fish here and even though some species do cost more than others, people tend to go for those that they know and unwilling to try new ones. Then they complain it’s expensive!
The fish I am talking about is the Milkfish (bangus as it is called in the Philippines). Sold in markets around Singapore where there is a larger Filipino community. This Milkfish is usually ignored by locals maybe because they don’t know how to cook, or perhaps it has lots of bones, etc. Anyway, generally fish with more bones usually taste better.
The price of this milkfish is reasonable at $5 per kilo, easy to cook and taste great. The best part of the fish for me is the stomach area (blackish in colour) with “melt in the mouth fats”.
If you like to remove the bones to making eating easier, here’s a video that I found online on how they do it in the Philippines. I have not personally tried removing the bones as in the video, it’s going to need some practice I am sure.
As for cooking it, after opening the fish into halves as in the video, cleaning the fish and removing the back bone. Sprinkle some salt, pepper and rub some soy sauce on the fish, pop it into a toaster and grill it for a few minutes till cooked and it’s ready to eat.
